1 can (15 ounces) of pumpkin
2 1/2 cups sugar
1 cup canola oil
1 tablespoon cinnamon
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
2 teaspoons baking soda
3 cups of flour
1/2 cup nuts and/or baked pumpkin seeds
2 tablespoons butter at room temperature
1/4 cup nuts and/or baked pumpkin seeds
1/2 can of sweetened condensed milk
Preheat your oven to 350 degrees. Grease a bundt pan with butter or oil. In a large bowl, mix together pumpkin and sugar until well blended. Add in oil, eggs and blend until smooth. In a separate bowl, mix together spices, baking soda, flour and salt. Slowly add the dry mixture to the pumpkin mixture ensuring there are no lumps. Stir in nuts or seeds and pour into greased pan. Bake for 60-65 minutes or until a toothpick comes out clean. Once cooled, remove from pan and place on an oven-safe serving dish. Heat the oven to 350 degrees again. In a small bowl, stir together butter, cinnamon sugar, and nuts. Apply to the top of the cake with a spatula or your hands. Place in oven for 5 minutes, or until butter has melted. Drizzle some sweetened condensed milk over the top and serve!
